Ingredients

  • 8 fresh apricots
  • 8 sugar cubes
  • 250g (9 oz) quark or farmer’s cheese
  • 1 large egg
  • 50g (1.7 oz) butter, melted
  • 100g (3.5 oz) semolina
  • 2 tablespoons granulated sugar
  • Pinch of salt
  • 100g (3.5 oz) breadcrumbs
  • 2 tablespoons powdered sugar, for dusting

Instruction:

  • Apricot Preparation: Wash and pat dry the apricots. Make a small incision and remove the pits, replacing each pit with a sugar cube. Set aside.
  • Dough Formation: In a bowl, combine the quark or farmer’s cheese, egg, melted butter, semolina, granulated sugar, and a pinch of salt. Mix well to form a smooth dough. Let it rest for 30 minutes in the refrigerator to make it easier to handle.
  • Breadcrumb Preparation: In a skillet, lightly toast the breadcrumbs until golden brown. Set aside to cool.
  • Dumpling Assembly: Divide the dough into 8 equal portions. Flatten each portion into a disc and place an apricot in the center. Enclose the apricot with the dough, ensuring it is fully covered and sealed. Roll gently to form a smooth ball.
  • Cooking the Dumplings: Bring a large pot of lightly salted water to a gentle boil. Carefully place the dumplings into the water and simmer for 10-12 minutes, or until they float to the surface.
  • Finishing Touches: Using a slotted spoon, remove the cooked dumplings and roll them in the toasted breadcrumbs.
  • Serving: Dust the Marillenknödel with powdered sugar and serve immediately, either on their own or with a dollop of whipped cream or vanilla ice cream. For added texture, sprinkle some toasted breadcrumbs on top.
