Ingredients

  • 1 cup mixed dried fruit (raisins, sultanas, currants, etc.)
  • 1 cup strong black tea
  • 2 cups all-purpose flour
  • 1/2 cup brown sugar
  • 1 egg, beaten
  • 1 teaspoon baking powder
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon mixed spice (optional)
  • Pinch of salt
  • Butter, for greasing
  • Optional: Charms wrapped in parchment paper for baking inside the loaf

Instruction:

  • Fruit Soaking: Combine the dried fruit and hot black tea in a bowl. Cover and let it soak overnight. This allows the fruit to plump up and absorb the tea flavor.
  • Batter Preparation: Preheat the oven to 325°F (160°C). Grease a loaf pan with butter. In a mixing bowl, sift together the flour, baking powder, ground cinnamon, ground nutmeg, mixed spice (if using), and salt. Stir in the brown sugar.
  • Mixing the Ingredients: Drain the soaked fruits and add them to the dry mixture. Add the beaten egg and mix until you have a thick batter. If using, add the wrapped charms and ensure they’re evenly distributed within the batter.
  • Baking the Barmbrack: Pour the batter into the prepared loaf pan and smooth the top with a spatula. Bake in the preheated oven for about 1 to 1.5 hours, or until a skewer inserted in the center comes out clean.
  • Cooling and Serving: Allow the Barmbrack to cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely. Slice and serve, ideally with a pat of butter.
