Ingredients

  • 4 chicken legs or thighs, bone-in and skin-on
  • Salt and pepper, to taste
  • 4 ounces bacon, diced
  • 1 onion, finely chopped
  • 2 carrots, peeled and sliced
  • 2 cloves garlic, minced
  • 1 tablespoon all-purpose flour
  • 1 bottle (750 ml) red wine (such as Burgundy or Pinot Noir)
  • 2 cups chicken broth
  • 1 bouquet garni (a bundle of herbs like thyme, rosemary, and bay leaf)
  • 12-16 pearl onions, peeled
  • 8 ounces mushrooms, cleaned and quartered
  • 2 tablespoons butter
  • Chopped fresh parsley, for garnish

Instruction:
