Ingredients

  • 1 cup raspberries, fresh or frozen
  • 2 cups heavy cream
  • 1/4 cup Scotch whisky
  • 3 tablespoons honey
  • 1/2 cup rolled oats
  • 1 tablespoon brown sugar
  • A pinch of sea salt
  • A few mint leaves for garnish (optional)

Instruction:

  1. Toast Oats: Preheat your oven to 350°F (175°C). Spread the rolled oats on a baking sheet and toast them in the oven for about 10-12 minutes or until they are golden brown. Remove and let cool.
  2. Whip Cream: In a mixing bowl, whip the heavy cream until it forms soft peaks. Be careful not to overwhip.
  3. Add Flavor: Gently fold the honey and Scotch whisky into the whipped cream. Mix until well incorporated.
  4. Prepare Raspberries: In a separate bowl, lightly mash half of the raspberries with a fork.
  5. Assemble: In serving glasses, layer the whipped cream mixture, toasted oats, and raspberries. Start with a layer of cream, followed by oats, mashed raspberries, more cream, and finally top with whole raspberries.
  6. Garnish: Sprinkle a pinch of brown sugar and sea salt on top for added flavor. Optionally, you can add a mint leaf for garnish.
  7. Serve: Chill the assembled Cranachan in the fridge for at least 30 minutes before serving to allow flavors to meld together. Serve cold.
