  • 1 cup tomato passata or crushed tomatoes
  • 1/4 cup apple cider vinegar
  • 1/4 cup chicken or vegetable broth
  • 2 tablespoons curry powder
  • 1 tablespoon smoked paprika
  • 1 teaspoon cayenne pepper (adjust for heat preference)
  • 2 tablespoons honey or brown sugar
  • Salt and freshly ground black pepper, to taste
  • 4 tablespoons curry powder (for sprinkling)
  • Fresh parsley, finely chopped for garnish
  • Rustic bread or French fries, to serve

Instruction:

  1. Sauté Aromatics: In a saucepan over medium heat, add the olive oil, onions, and garlic. Cook until the onions are translucent.
  2. Add Liquids and Spices: Pour in the tomato passata, apple cider vinegar, and broth. Stir in the curry powder, smoked paprika, cayenne pepper, and honey or brown sugar. Season with salt and black pepper. Allow this mixture to simmer for 15-20 minutes, until slightly thickened.
  3. Cook the Sausages: While the sauce is simmering, heat a separate pan or grill. Cook the sausages until they’re browned and fully cooked, turning occasionally.
  4. Serve: Once sausages are cooked, slice them into bite-sized pieces. Pour the curry sauce over the sausages, ensuring they’re well coated. Sprinkle generously with curry powder and garnish with chopped parsley. Serve immediately with rustic bread or fries.
