Ingredients

  • 800g (28oz) fresh kale, washed and coarsely chopped
  • 4 Bregenwurst sausages
  • 2 medium-sized onions, finely chopped
  • 2 tbsp goose fat or unsalted butter
  • 1 tsp sugar
  • 300ml (10 fl oz) meat or vegetable broth
  • 2 bay leaves
  • 4 medium-sized potatoes, peeled and cubed
  • Salt, to taste
  • Freshly ground black pepper, to taste
  • 1 tsp ground nutmeg
  • 2 tbsp mustard (optional)

Instruction:

  1. Prepare the Kale: Remove the stems and thick veins from the kale, then chop the leaves into bite-sized pieces.
  2. Sauté Onions: In a large pot, melt the goose fat or butter over medium heat. Add the chopped onions and sugar, then sauté until the onions are translucent and slightly caramelized.
  3. Cook Kale: Add the chopped kale to the pot and stir well to combine. Pour in the broth and add the bay leaves. Reduce the heat to low, cover the pot, and let the kale simmer for about 45 minutes.
  4. Add Potatoes: Stir in the cubed potatoes and cook for an additional 20 minutes or until the potatoes are tender.
  5. Cook Bregenwurst: In a separate pan, boil the Bregenwurst sausages for about 20 minutes. Once cooked, you can slightly brown them in a pan with a touch of butter for added flavor.
  6. Season and Serve: Remove the bay leaves from the kale mixture. Season with salt, pepper, and nutmeg. Place the kale and potatoes on serving plates, and top with a Bregenwurst. Serve with mustard on the side if desired.
