  • 4 large ripe tomatoes, cut into wedges
  • 1 large cucumber, peeled and sliced
  • 1 red onion, thinly sliced
  • 1 bell pepper (red or green), thinly sliced
  • 200g (7oz) feta cheese, crumbled or cut into slabs
  • 16 Kalamata olives
  • 2 tsp dried oregano
  • 4 tbsp extra-virgin olive oil
  • Salt, to taste
  • Freshly ground black pepper, to taste
  • 2 tbsp fresh lemon juice or red wine vinegar
  • A handful of fresh mint leaves, finely chopped (optional for added freshness)
