Ingredients

  • 2 lbs of pork shoulder or chicken thighs, thinly sliced
  • 4 cloves of garlic, minced
  • 1 large red onion, finely chopped (keep some slices for serving)
  • 2 tbsp extra virgin olive oil
  • 1 tbsp red wine vinegar
  • 2 tsp dried oregano
  • 1 tsp dried thyme
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • 1 tsp ground coriander
  • Salt and freshly ground black pepper to taste
  • 4 pita bread or flatbreads
  • Tzatziki sauce for serving
  • Sliced tomatoes, cucumber, and lettuce for serving

Instruction:

  1. In a large mixing bowl, combine the olive oil, red wine vinegar, minced garlic, oregano, thyme, cumin, smoked paprika, coriander, salt, and pepper. Mix thoroughly to form the marinade.
  2. Add the thinly sliced pork or chicken to the marinade, ensuring each piece is well coated. Allow to marinate for at least 3 hours, preferably overnight, in the refrigerator.
  3. Once marinated, heat a skillet or grill pan over medium-high heat. Once hot, cook the meat in batches to avoid overcrowding. Each piece should cook for about 3-4 minutes per side or until fully cooked and slightly charred.
  4. Warm the pita or flatbread in a dry skillet or oven.
  5. To serve, place some meat on the warmed bread, top with tzatziki sauce, fresh red onion slices, tomatoes, cucumber, and lettuce.
  6. Fold the pita or flatbread around the fillings and enjoy.
