Ingredients

  • 1 kg (2.2 lbs) lamb shoulder, cut into chunks
  • 4 large potatoes, peeled and sliced
  • 2 large onions, chopped
  • 4 carrots, peeled and sliced
  • 3 cups beef or lamb broth
  • 2 tablespoons olive oil
  • 2 teaspoons fresh thyme leaves
  • 2 bay leaves
  • Salt and pepper, to taste
  • Fresh parsley, chopped (for garnish)

Instruction:

  • Lamb Preparation: In a large pot or Dutch oven, heat the olive oil over medium-high heat. Add the lamb chunks and brown on all sides. Remove the meat and set aside.
  • Vegetable Layering: In the same pot, layer half of the sliced potatoes at the bottom. Follow this with half of the browned lamb, chopped onions, and sliced carrots. Repeat the layers with the remaining ingredients.
  • Herb Infusion: Sprinkle the fresh thyme leaves, bay leaves, salt, and pepper over the layers.
  • Broth Bath: Pour the broth over the layered ingredients, ensuring that the liquid almost covers the meat and vegetables.
  • Slow Simmering: Bring the stew to a gentle boil, then reduce the heat to low. Cover and let it simmer for about 1.5 to 2 hours, or until the meat is tender and the flavors are well combined.
  • Final Touch: Check the seasoning and adjust if necessary. Remove the bay leaves and discard them.
  • Garnishing: Serve the Irish Stew hot, garnished with freshly chopped parsley.
