Ingredients

  • 2 cups all-purpose flour
  • 4 large eggs
  • 1/4 cup milk
  • Salt and freshly ground black pepper
  • 1 cup grated Emmental cheese (or Gruyere)
  • 1 cup grated sharp Cheddar
  • 1 large onion, thinly sliced
  • 4 tbsp unsalted butter
  • Fresh chives, finely chopped for garnish
  • 1 tsp nutmeg, freshly grated

Instruction:

  1. In a mixing bowl, combine the flour, eggs, milk, a pinch of salt, and nutmeg. Stir until a smooth, thick batter forms.
  2. Let the batter rest for about 15 minutes.
  3. Bring a large pot of salted water to boil.
  4. Using a spätzle maker or a colander with large holes, press the batter through directly into the boiling water. Boil the spätzle until they float to the surface, then cook for an additional 2-3 minutes.
  5. Drain the spätzle and rinse with cold water to stop the cooking process. Set aside.
  6. In a large skillet, melt the butter over medium heat. Add the thinly sliced onions and sauté until they are caramelized and golden brown.
  7. Add the drained spätzle to the skillet, stirring to combine and heat through.
  8. Gradually add the cheeses, stirring constantly until melted and fully incorporated.
  9. Season with salt and freshly ground black pepper to taste.
  10. Transfer to a serving dish and garnish with freshly chopped chives.
