Ingredients

  • 4 pork rib portions
  • 32 oz (2 lbs) sauerkraut, drained
  • 1 large onion, finely chopped
  • 2 cloves garlic, minced
  • 2 bay leaves
  • 8 whole black peppercorns
  • 2 cups chicken or pork broth
  • 1 cup dry white wine (like Riesling)
  • 2 tablespoons lard or vegetable oil
  • Salt and freshly ground black pepper, to taste
  • 4 medium-sized potatoes, peeled and halved
  • Fresh parsley, chopped for garnish

Instruction:

  1. In a large pot, heat the lard or vegetable oil over medium heat. Brown the pork ribs on all sides, then set them aside.
  2. In the same pot, sauté the onions until translucent. Add the minced garlic and sauté for another minute.
  3. Deglaze the pot with the white wine, scraping up any browned bits from the bottom.
  4. Add the sauerkraut, bay leaves, and peppercorns to the pot. Pour in the chicken or pork broth.
  5. Place the browned ribs back into the pot, nestling them into the sauerkraut.
  6. Bring to a simmer, cover, and cook for 1.5 hours.
  7. In a separate pot, boil the potatoes until fork-tender. Drain and set aside.
  8. Once the ribs are tender, season the sauerkraut with salt and pepper to taste.
  9. Serve the pork ribs on a plate with sauerkraut, boiled potatoes, and garnish with fresh parsley.
