Ingredients

  • 2 lbs of starchy potatoes
  • 1/2 cup of all-purpose flour, plus more for dusting
  • 2 eggs
  • Salt to taste
  • 1/2 cup of breadcrumbs
  • 2 tbsp unsalted butter
  • 1/4 cup finely chopped fresh parsley (optional for garnish)

Instruction:

  1. Peel the potatoes and boil them in a large pot of salted water until they are soft and fully cooked through.
  2. Drain the potatoes and allow them to cool slightly. Then, using a potato masher or ricer, mash the potatoes until smooth.
  3. Add the eggs to the mashed potatoes and mix until well combined.
  4. Gradually add in the flour, mixing until a firm dough forms. If the mixture is too sticky, add a little more flour.
  5. Divide the dough into 8 equal portions and shape each into a ball.
  6. In a skillet, melt the butter over medium heat. Add the breadcrumbs and toast until golden brown. Set aside.
  7. Bring a large pot of salted water to boil. Reduce the heat until the water is at a gentle simmer. Carefully drop in the potato dumplings and let them simmer for about 15-20 minutes, or until they float to the surface and are cooked through.
  8. Using a slotted spoon, remove the Kartoffelklöße from the water and drain.
  9. Roll each dumpling in the toasted breadcrumbs.
  10. Serve hot, garnished with finely chopped parsley, if desired.
