Rucola Pizza Recipe – Fresh and Flavorful

Rucola Pizza, also known as Arugula Pizza, is a delightful and fresh twist on traditional pizza. This recipe features a crispy crust topped with a rich tomato sauce, melted mozzarella, and fresh rucola (arugula). Ingredients

  • 500g (17.6 oz) pizza dough (you can buy pre-made or make from scratch)
  • 200g (7 oz) mozzarella cheese, shredded
  • 150g (5.3 oz) cherry tomatoes, halved
  • 100g (3.5 oz) fresh rucola (arugula)
  • 100g (3.5 oz) Parma ham or prosciutto
  • 2 tablespoons olive oil
  • 1 garlic clove, minced
  • Salt and freshly ground black pepper, to taste
  • 50g (1.8 oz) freshly grated Parmesan cheese
  • 1 tablespoon balsamic reduction (optional for drizzling)
  • Red pepper flakes (optional)

Instruction:

  1. Preheat your oven as high as it will go, ideally around 475°F (245°C). If you have a pizza stone, place it in the oven while it’s heating.
  2. On a floured surface, roll out the pizza dough into 4 individual pizza bases. Let them rest for about 5 minutes.
  3. In a small bowl, combine the olive oil and minced garlic. Brush this garlic oil over each pizza base.
  4. Evenly distribute the mozzarella cheese and cherry tomatoes over each pizza.
  5. Transfer the pizzas to the oven. If you’re using a pizza stone, transfer one pizza at a time onto the hot stone.
  6. Bake for 10-12 minutes or until the crust is golden and the cheese is bubbly and slightly browned.
  7. Remove the pizzas from the oven and immediately top with slices of Parma ham or prosciutto.
  8. Sprinkle fresh rucola over each pizza.
  9. Finish with freshly grated Parmesan cheese and a drizzle of balsamic reduction if desired. Season with salt, black pepper, and red pepper flakes.
  10. Slice and serve immediately.
