Prep Time: 15 mins
Cooking Time: 45 mins
Total: 60 minutes mins

Ingredients

  1. 12 oz (340g) spaghetti
  2. 1 lb (450g) ground beef or mix of beef and pork
  3. 1 medium-sized onion, finely chopped
  4. 2 cloves garlic, minced
  5. 1 carrot, finely diced
  6. 1 celery stalk, finely diced
  7. 1 can (14 oz/400g) of crushed tomatoes
  8. 1/4 cup (60ml) red wine (optional)
  9. 2 tablespoons olive oil
  10. 1 tablespoon tomato paste
  11. 1 teaspoon dried oregano or mixed Italian herbs
  12. 1/4 cup fresh basil, chopped
  13. 1/4 cup grated Parmesan cheese
  14. Salt and pepper, to taste
  15. 2 tablespoons fresh parsley, chopped (for garnish)

Instruction:

  1. In a large skillet or pan, heat the olive oil over medium heat. Add the onions, garlic, carrot, and celery. Sauté until the onions become translucent and the vegetables soften.
  2. Add the ground meat to the pan and break it up with a spatula. Cook until browned.
  3. Pour in the red wine (if using) and let it simmer until it has mostly evaporated.
  4. Stir in the tomato paste and mix well.
  5. Add the crushed tomatoes, dried oregano (or herbs), salt, and pepper. Reduce the heat to low and let it simmer for about 30 minutes, stirring occasionally. This will allow the flavors to meld.
  6. While the sauce is simmering, cook the spaghetti in a large pot of salted boiling water according to package instructions or until al dente. Drain and set aside.
  7. Just before the sauce is done, stir in the fresh basil and half of the grated Parmesan cheese.
  8. Combine the drained spaghetti with the sauce, ensuring the pasta is well coated.
  9. Serve hot, garnished with the remaining Parmesan cheese and chopped parsley.
