Ingredients

  • 5 medium-sized potatoes, peeled and thinly sliced
  • 1 large onion, thinly sliced
  • 6 large eggs
  • 1/4 cup olive oil
  • Salt, to taste
  • Fresh parsley, finely chopped (for garnish)
  • 1 red bell pepper, finely diced (optional for added color and flavor)

Instruction:

  1. In a large non-stick skillet, heat the olive oil over medium-high heat.
  2. Add the potato slices, ensuring they are separated and not sticking together. Cook until they are tender but not browned, turning occasionally. This should take about 10-15 minutes.
  3. Add the onions (and red bell pepper if using) to the skillet and cook until translucent.
  4. While the potatoes and onions are cooking, beat the eggs in a large bowl and season with salt.
  5. Remove the potatoes and onions from the skillet with a slotted spoon and drain excess oil. Add them to the beaten eggs and stir gently to combine.
  6. Pour out any excess oil from the skillet, leaving just enough to coat the bottom. Return the skillet to medium heat.
  7. Pour the egg, potato, and onion mixture into the skillet and spread it out evenly. Reduce the heat to low and cook for 10 minutes or until the bottom is golden brown and the top is mostly set.
  8. Carefully flip the tortilla onto a plate, then slide it back into the skillet (cooked side up). Cook for an additional 5-7 minutes or until golden brown.
  9. Slide the tortilla onto a plate, cut into wedges, and sprinkle with fresh parsley before serving.
