Ingredients

  • 4 veal cutlets (about 150g each)
  • 1 cup all-purpose flour
  • 2 eggs
  • 1 cup fine breadcrumbs
  • Salt and pepper, to taste
  • 1 cup clarified butter or lard
  • Lemon wedges, for serving
  • Fresh parsley, for garnish

Instruction:

  • Cutlet Preparation: Place the veal cutlets between two sheets of plastic wrap and gently pound them to a thickness of about 1/4 inch, being careful not to tear the meat.
  • Seasoning: Season each cutlet with salt and pepper on both sides.
  • Breading Station: Prepare three shallow dishes: one with flour, the second with beaten eggs, and the third with breadcrumbs. Coat each cutlet first in flour, shaking off any excess, then dip into the beaten eggs, and finally coat evenly with breadcrumbs.
  • Frying the Schnitzel: Heat the clarified butter or lard in a large skillet over medium-high heat. The fat should be hot enough that a small piece of breadcrumb sizzles immediately upon contact. Carefully place the breaded cutlets into the hot fat and fry for about 2-3 minutes on each side, until golden brown and crispy. The Schnitzel should “swim” in the fat.
  • Draining and Serving: Remove the Schnitzel from the skillet and let them drain on a plate lined with paper towels. Garnish with fresh parsley and serve hot with lemon wedges on the side.
